A chef who won a restaurant its first star left a year later to open 14 seats (Tokyo · Modern French)

Seven minutes on foot from Meguro Station in Tokyo, on the ground floor of a building that turns its back on the station-front shops and faces a residential street, a 14-seat French restaurant called Ansolence opens on the 26th of this month. Chef Hayashi Hiroyoshi is the man who, a year after taking over the kitchen at Restaurant MANOIR in Hiroo, won that 14-year-old restaurant its first star. The star stayed with the old restaurant's name, and the new place lists its dinner course at 3,300 yen below the one he left behind.

1.The address is Kamiosaki, Shinagawa Ward. Despite its name, Meguro Station itself sits in this neighborhood rather than in Meguro Ward. The operating company, Arc, was set up in April this year with 4 million yen in capital, and reservations go through only two channels, TableCheck and Tabelog.

2.Hayashi worked his way through starred Tokyo kitchens from 2013 and served as sous chef at le sputnik in Roppongi. He took over the kitchen at MANOIR in 2024, and in the MICHELIN Guide Tokyo 2026, announced the following autumn, the restaurant received its first star. MANOIR is a game-focused French restaurant run by Manoir Co., Ltd., a subsidiary of UMITO, and in the same announcement its owner-sommelier received the MICHELIN Sommelier Award.
3.The exterior rendering in the press release shows three low steps rising in front of a dark brick wall to a single white door flanked by lattice windows. In each brick planter beside the steps stands one fruit-bearing tree. The restaurant says it kept the weighty character of the existing building and filled the interior with the warmth of wood and open space. Instead of a signboard, a small plaque on the wall beside the door carries the name.

4.Step inside and the open kitchen faces you. In the rendering, a row of chairs with backrests lines a wooden counter, and above it a ceiling shaped like a timber box drops low, pooling light only over the work surface. An oven is set into the wall beyond the counter, so diners can watch the roasting from their seats, and the remaining seats are split between hall tables and a private room enclosed by dark walls. MANOIR also had 14 seats: 4 at the counter and 10 at tables.

5.The course opens with an amuse, moves through two starters, fish, meat and dessert, and closes with tea and small sweets. The method the chef describes is to draw out savoriness through the way he applies heat, then layer flavor with fruit sweetness and acidity, fermentation and salt curing. The published dishes show it plainly. Duck comes with fermented blueberry and mackerel with squid innards, so that a spoonful of sourness or bitter salt sits beside each rich cut. Kaga lotus root is paired with sweet shrimp. Fermenting and curing are done before service, which leaves only the work at the fire during service hours, and for a restaurant running lunch and dinner with a small team, that difference is labor cost.

6.The room where Hayashi won his star has a different grain. MANOIR is modeled on an English country manor, with dark wood paneling, a chandelier, and small black diamonds set into white floor tiles. Its signature was game. The owner-sommelier, who holds a hunting license, brings in the deer and oversees the butchering himself, and the main course of the 19,800-yen menu featured in March this year was roast Hokkaido venison with grilled leek. With wine pairing, 38,000 yen.

7.There is no venison on the list of dishes Ansolence has released. The hunting license and the supplier network belong to the owner, so the chef could not take them with him; what he did take is a pair of hands that know fire and fermentation. In their place, the press release headline opens with the words "MICHELIN Guide Tokyo 2026 one-star chef," and the food news site Gourmet Press ran that headline as is. MICHELIN awards stars to restaurants, not to chefs. Yet when people book, do they follow that rule, or the name?
8.The next verdict comes late. The 2026 edition came out last September, but the 2027 edition will be announced on February 16 next year, together with Kyoto, Osaka and Nara. For nearly five months until then, MANOIR operates under its star with a kitchen that no longer includes him, while Ansolence sells a starred chef's cooking without a star. The new restaurant's one chance to make the list is that winter.
9.Rather than raising prices, he lowered them. The 16,500-yen dinner sits below MANOIR's course, and the 8,800-yen lunch stays under 10,000 yen even with the service charge. A separate way in to a starred chef's course for under 10,000 yen. Wine is handled by chef sommelier Takaesu Toshimasa, who offers pairings in several tiers from standard to premium. The idea is to win back, glass by glass, what was given up on the course price.
10.Asking rents for restaurant premises around Meguro Station average 38,801 yen per tsubo this year, up 38% in three years. Fitting 14 seats with an open kitchen and a private room takes about 20 tsubo, which at station-front rates comes to roughly 780,000 yen a month (estimate). Ground floors deeper in the residential blocks usually come in lower, and that is where this restaurant chose to be.
11.Even with the same 14 seats, the money moves differently. MANOIR opens only for dinner and is reported at around 30,000 yen per guest, so if most dinner seats fill, monthly sales come to about 7.92 million yen (estimate). Ansolence gives up about 5,000 yen per dinner guest but turns the room once more at lunch, which on paper lifts sales to 8.89 million yen (estimate).

12.The margin is thin. French cooking is a trade where food cost has to be budgeted at close to 40%, and the moment lunch opens, the same team works two services from noon until 10:30 at night. After ingredients, labor, rent and card and booking fees, about 1.16 million yen a month is left (estimate).

13.The opening debt is repaid out of that. Japan's restaurant start-up advisers say a high-end standalone restaurant, with its fit-out and kitchen equipment, easily borrows more than 20 million yen and takes 6-7 years to recoup. Arc's 4 million yen in capital covers only part of that, and repaying the loan over seven years means principal alone runs in the 300,000s of yen each month (estimate). The whole calculation rests on the premise that the lunch seats fill.
14.Takahashi Yujiro, owner-chef of le sputnik where Hayashi stood as sous chef, walked this path first. As chef at Le Jeu de l'Assiette he held one star for five consecutive years, and in July 2015 he opened his own 20-seat restaurant in Roppongi. Earn a star in someone else's restaurant, carry that record out, and open a place of around 20 seats: two people from the le sputnik kitchen have now taken those steps in turn.
15.MANOIR keeps the room, the cellar and the hunting suppliers, and until February next year it keeps the star as well. No successor head chef appears in public records. The first Tokyo guide ever released in February will answer two questions on the same day. Whether MANOIR's star continues, and whether Ansolence makes the list.

16.A chef who won a restaurant its first star has opened the same 14 seats at a lower price. It is a model that leaves about 1.16 million yen a month only if lunch turns the room once more (estimate). In Korea, running two services a day like this runs first into the 52-hour workweek: at workplaces with five or more regular employees, the overtime cap means one team cannot cover both lunch and dinner on a single roster. The moment you add people, what lunch earned goes straight out as labor cost.
